Street Corn Dip

Ingredients:

  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions:

  1. In a large mixing bowl, combine corn, mayonnaise, sour cream, cheese, red onion, cilantro, jalapeño, and garlic.
  2. Add chili powder, cumin, salt, pepper, and lime juice. Mix well until all ingredients are combined.
  3. Adjust seasoning to taste.
  4. Refrigerate for at least 1 hour before serving to allow flavors to meld.
  5. Serve with tortilla chips and enjoy your delicious street corn dip!
