Street Corn Dip
Ingredients:
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup shredded Mexican blend cheese
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, seeded and finely chopped
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lime
Instructions:
- In a large mixing bowl, combine corn, mayonnaise, sour cream, cheese, red onion, cilantro, jalapeño, and garlic.
- Add chili powder, cumin, salt, pepper, and lime juice. Mix well until all ingredients are combined.
- Adjust seasoning to taste.
- Refrigerate for at least 1 hour before serving to allow flavors to meld.
- Serve with tortilla chips and enjoy your delicious street corn dip!
