Ingredients (serves 2)

  • 1 cantaloupe, peeled and cubed
  • 2  cups of mixed salad greens
  • 3  oz. prosciutto ham
  • 4  oz. fresh mozzarella balls
  • Fresh basil, diced
  • Salt and pepper

Directions

  1. Place ½ of the salad greens on a serving plate and top with ½ of the cubed cantaloupe, ½ of the fresh mozzarella, and ½ of the prosciutto ham.  Top with basil leaves.
  2. Repeat step 1 for the second plate.
  3. Salt and pepper to taste.
