Ingredients (Serves 1)
- 1 ¼ cups kale and romaine salad mix
- 3 slices cucumber
- 4 grape or cherry tomatoes
- 3 rings of sliced red onions
- 1/3 cup (3 oz.) deli turkey, cubed or shredded
- 2 tbsp. (1 oz.) deli ham, cubed or shredded
- 2 tbsp. (1 oz.) Swiss cheese, cubed or shredded
- 1 hard-boiled egg, cut in half
- 2 tbsp. (1 oz.) low fat vinaigrette dressing
Directions
- Mix all ingredients together.
- Drizzle the dressing evenly.

- Any type of lettuce or mix of leafy greens can be used in the salads to total the amount of leafy greens listed in the ingredients.
