Ingredients (Serves 1)

  • 1 whole grain or whole wheat sub roll or wrap
  • 2 (1 oz.) tbsp. sriracha mayo
  • 2 Romaine lettuce leaves
  • 4 (4 oz. total) deli slices teriyaki style chicken breast
  • 1/3 (2.6 oz.) cup red and green peppers, chopped
  • 1 small carrot, cut into matchsticks

Directions

  1. Slice the sub roll lengthwise.
  2. Spread sriracha mayo on the top sandwich roll.
  3. Layer ingredients in the following order, starting on the bottom roll: Lettuce, chicken, peppers, and carrots.
  4. Crown with the top of the roll and serve.
