Ingredients (Serves 1)

  • 1 6” whole wheat or whole grain sub roll
  • 1 (1 oz.) slice mild cheddar cheese
  • ½ cup (3 oz.) sliced deli roast beef
  • 1/8 cup (1 oz.) baby spinach
  • 2 slices of tomato, half inch thick
  • 1 tbsp. (½ oz.) green peppers, thinly sliced
  • 1 tbsp. (½ oz.) red onion, thinly sliced
  • 4 slices cucumber
  • 5 slices of black olives
  • 1 small deli to-go packet of mayo and mustard

Directions

  1. Cut the roll horizontally in half.
  2. Layer the spinach, bell peppers, tomatoes, onions, and cucumbers.  
  3. Sprinkle the olives and top with the roast beef and cheese.

Notes

  • Any type of lettuce or mix of leafy greens can be used in the sandwiches to total the amount of leafy greens listed in the ingredients, however the nutritional analysis is based on the ingredients (type of leafy greens and amount) listed in the recipe.
